Jock Gibson
Edinvale Farm
Jock Gibson and his wife Fiona are the the owners of Edinvale Farm, based at Dallas in Moray producing Scotch Beef. Jock is also a qualified butcher, owning and running Macbeth’s Butcher in Forres.
Jock started out his professional life as a consultant engineer in Peterborough before moving to Glasgow. Jock moved back up north to start running Macbeth’s in 2006 and took on the running of the family farm after the sudden death of his parents in 2014 and 2015.
Edinvale Farm are a member of the Core Community Group for Scotland’s Agritourism Monitor Farms Programme.
Jock are a current Nuffield Scholar studying the effects of animal diet and nutrition on meat eating quality. He is also exploring the link between red meat consumption and personal well-being.
